    Come to Lander City Park this Saturday from 9 to 11:30 a.m. to peruse and purchase local produce, products, and art at the Lander Valley Farmers Market.

    Sweet corn is in the line-up. Here’s a tasty soup recipe that features corn, as well as many other current farmers’ market offerings.

    Fresh Corn Soup

    Ingredients:

    • 1 tablespoon olive oil
    • 1 red-skinned potato, peeled and chopped
    • 1 carrot, chopped
    • 1 onion, chopped
    • 1 clove garlic, minced
    • 4 cups chicken stock
    • 6 ears of corn, cut from the cob
    • salt and pepper
    • 2-3 tablespoons fresh parsley or thyme
    • 2 limes
    • hot sauce or butter

    Heat a large pot over medium heat. Add the olive oil, potato, carrot, and onion. Cook until the onion is tender, about six to seven minutes. Add the garlic and cook for 30 seconds. Pour in the chicken stock and stir. Add salt and pepper. Bring to a boil. Cover and reduce to a simmer for five minutes. Add half of the corn and cook, covered, for 10 to 15 minutes, until vegetables are tender. Transfer the mixture to a blender and blend until smooth. Alternatively, use an immersion blender. Pour the soup back into the pot. Add the remaining corn, parsley, and salt and pepper to taste. Serve with a squeeze of lime and butter/hot sauce. Enjoy!
