    Last Lander Valley Farmers Market of the season tomorrow!

    Head to Lander City Park on Saturday from 9 to 11:30 a.m. to peruse and purchase local produce, products and art at the Lander Valley Farmers Market. This will be the last farmers’ market of the 2021 season. Thank you for being part of it!

    While some vegetable gardens are starting to hibernate for the winter, beets can still be found. Below is a recipe for a tasty beet hummus.

    Beet Hummus

    Ingredients

    • 1 large beet (or more smaller ones)

    • 2 cloves garlic

    • 1 15-ounce can chickpeas, drained and rinsed

    • 2 tablespoons tahini

    • 2 tablespoons olive oil

    • 2 tablespoons fresh lemon juice

    • 2 tablespoons warm water

    • ½ teaspoon cumin

    • ½ teaspoon coriander

    • Salt

    • Pepper

    Preheat the oven to 400°F. Drizzle the beet with olive oil and then wrap the beet and garlic together in foil. Place on a baking sheet and roast 40 minutes. Let cool. Peel the beet skins under running water using your hands. Chop the beet and place it in a blender. Add the roasted garlic, and the other ingredients. Blend and chill.
