    Due to football events, the three remaining summer farmers’ markets will take place in the fire department area, which is adjacent to the usual parking lot. It’s at the corner of Fremont Street and City Park Drive. Please use the City Park Drive entrance.

    Got tomatoes? Following is a tasty tomato soup recipe. Got green tomatoes? Stick them in a paper bag, close it up, and store it in a warm location in your home. Add a ripe banana or apple to speed things up even more.

    Tomato Soup

    Ingredients:

    • Small yellow onion, chopped
    • 2 tablespoons butter
    • 1/4 cup all-purpose flour
    • 2 cups (or one can) coconut milk
    • 1/4 cup tomato paste
    • 4 pounds tomatoes, chopped
    • Salt and pepper

    Instructions:

    Melt the butter over medium-low heat in a large stockpot. Add the onions, and sauté for two minutes. Stir in the flour to coat the onions. Reduce heat to low. Gradually pour in the coconut milk. Stir or whisk constantly to combine and allow the mixture to thicken (two to three minutes). Add the tomato paste and chopped tomatoes, and stir to combine. Allow the mixture to simmer until the onions are cooked and the tomatoes are soft (approximately 30 minutes). Process in batches through a blender, or use an immersion blender for desired texture. Season with salt and pepper. For added spice, blend in a canned chipotle or two.
