Have a cabbage craving? Let the Lander Valley Farmers Market conquer your craving

Come to Lander City Park this Saturday from 9 to 11:30 am to peruse and purchase local produce, products and art at the Lander Valley Farmers Market.

Among this week’s harvest and artistic finds will be artisan bread (including rustic, roasted potato-herb, kalamata olive and rye), raspberries, cucumbers, zucchini bread, pies, kohlrabi, Swiss chard and broccoli.

Some beautiful heads of cabbage are showing up at the market. I made this tasty slaw this week (using cabbage, carrots, onion and honey from the market), and it was wonderful!

Coleslaw

1 head of green cabbage, finely shredded

1 large carrot, grated

1/2 yellow or red onion, finely sliced

Dressing

1/3 cup apple cider vinegar

3 tbsp olive oil

1 tbsp honey

1/2 tbsp Dijon mustard

1 tsp celery seed

1/4 tsp salt

1/4 tsp black pepper

Add the shredded green cabbage, carrot and onion to a large bowl. In a smaller bowl, whisk together the apple cider vinegar, Dijon mustard, honey, olive oil, celery seed, salt and pepper. Gently toss the coleslaw with the dressing, serve and enjoy.
