Hey Riverton, guess who bought it!?
The restaurant building at 400 N. Federal in Riverton has been many things over the years. In just the last few years, it’s been a buffet restaurant, “Cowboy Cajun,” Mexican and even off-track horse race betting. But everyone has been wondering who bought the place since the “For Sale” sign came down.
The rumors run pretty wide, from a local collaboration between business people to wealthy Jackson Hole investors.
As of just after the New Year, the proud owner of the building is Kyle Vassilopoulos. Kyle is the very involved owner of the Cowfish, Lander Brewing Company, Lander Bar, Gannett Grill and Scream Shack on the “Coulter Block” in Lander. Kyle moved to the area about 5 years ago from Montana. He attended the French Culinary Institute of Manhattan and worked in top-notch restaurants all over the country until settling down in Lander.
“There are lots of rumors about what we’re doing in Riverton, but nobody knows yet….except me. So the rumors are just rumors. I mean whatever we do, I hope people love it, but the rumors are pretty wild.”
One rumor Kyle laughs about is that he’s a wealthy investor. “Unless by wealth you mean debt, then no that’s not me. I work in my places around 70 hours a week and I love it, but I’m definitely not rich. I just love to cook and build places where people can come together.”
There is no established timeline for opening a new business on the property and Kyle’s keeping the details to himself. “There’s still a lot to figure out. I’ve been looking for a place for about 3 years and this was the right opportunity, but there’s a lot of work to do before it’s a reality.”
