    Be sure to hit up the final Lander Valley Farmers Market of the season this Saturday!

    Due to football events, the final summer farmers’ market will take place in the fire department area, which is adjacent to the usual parking lot. It’s at the corner of Fremont Street and City Park Drive. Please use the City Park Drive entrance.

    It may be the final market of the season, but there’s still lots to peruse and purchase. This weekend’s market features produce, tortillas, masks and pottery, among many other things.

    Following is a tasty kale recipe.

    Kale Salad

    Ingredients:

    • 1 bunch kale, peel leaves off the stem into bite-size pieces
    • 1 avocado
    • 2 tbsp olive oil
    • 2 tbsp lemon juice
    • salt and pepper, to taste
    • 1 carrot, chopped or julienned
    • 1/4 cup raisins
    • 2 tbsp sunflower seeds

    Instructions:

    Add kale, carrots, raisins, and sunflower seeds to a large salad bowl. Add avocado and mix together using hands, making sure everything is coated evenly. Add olive oil, lemon juice, salt and pepper. Toss together and enjoy!
