Airport Cafe tentatively set to reopen on May 17th; Evening dinner service planned

(Riverton, Wyo.) – The city council made it official Tuesday night, the Airport Café will be reopening on May 17th, if all goes as planned. A contract with Fullmer’s Fat Boy was adopted unanimously. The Fullmer’s already operate restaurants in Riverton and Shoshoni.

City Administrator Steven Weaver said the lease agreement was worked up Monday and then emailed to the council for consideration at Tuesday’s meeting. Weaver said the lease is for one year with an option to renew. He also said minimum café hours coincide with Great Lakes Airlines arrivals. “If they want to be open more than that, that’s fine, but we at least wanted them to be open when the flights arrive,” he said.

Weaver said the city is currently sprucing up the space with new paint and a chair rail around the room to protect the sheet rock walls. He also said a professional industrial cleaning firm has been contracted to give the kitchen equipment a good going over to rid the cooking and other surfaces of grease and grime.

As for the contract, Weaver said this is a better deal for the city that what was in the previous contract.

“We will make sure all the equipment is in working order when they take over, and past that time it would be the lessee’s responsibility for all repairs,” he said. The city will receive 2.5 percent of the monthly gross sales, with a minimum of $300 a month owed for the first two months of operation and an August minimum of $500. The maximum would be $1,500 paid to the city each month. The lessee would also be responsible for the utilities at $800 per month. And, after what happened with the last operator, a default addendum was added to the contract if they fail to pay rent or abandon the property.

The previous café operator abruptly closed in March without any warning to the city.

Weaver said Bob and Patty Fullmer plan on providing a fine dining experience in the evening when the tables will be covered with tablecloths and menu items would include crab legs and such. The café will also offer breakfast and lunch service. The Fullmer’s said they will keep their other restaurants open, making the Airport Cafe their third county restaurant.

A total of four operator’s applied for the opportunity to operate the cafe, including Ray Nimmo, Pepe’s Tacos, The Freezer and Fullmer’s Fat Boy.
