(Riverton, Wyo.) – Dining will soon be available once again at Riverton Regional Airport. After the abrupt closure of the Airport Cafe in February, the city put out a request for proposals for a new operator there. After four establishments submitted applications, and that list was narrowed to two finalists, the city has chosen Fulmer’s Fat Boy to be the new operator.

Airport Manager Paul Griffin said the decision will be reviewed by the City Council at its May 6th meeting. “They have some great plans for the diner, including a more formal evening setting,” he told the Airport Board on Friday. “They already have a restaurant in downtown Riverton and one in Shoshoni and it’s my understanding that after the city council acts, they’ll pick up the key and get ready to open.
